I'm not clear whether a "directory" of defunct sides is intended to include contact details (as in a typical printed directory), i.e. presumably links to now-out-of-date websites, or whether it is also a list of former sides which don't have any website. If the latter, what is the point? Will extra information about each side (dates of operation, location, etc.) ultimately be included?

Extra information can be included right now. Location already is, and there are dates for some sides (see Historical morris teams in United States). Of course there can be a link to a web site if there is one. (Not necessarily an out of date site either; there are "tribute sites" for some defunct sides, e.g. Salt Springs Morris.) And I would not be averse to a wiki link to a page in this wiki about the team, if you want to create one.
